The annual olive harvest and production season runs from November through to February with around 2,000,000 kilos of olives from the surrounding area being processed. Every day up to 50,000 kilos of fruit are cleaned, washed and weighed. Crucially the fresh olives are then ground immediately to prevent the fruit from fermenting and spoiling, thereby ensuring that the oil will be of the highest quality extra virgin oil. After pressing the pulp is then decanted naturally, filtered and the resulting Medel extra virgin olive oil is bottled for distribution.
